Bangkok Coconut Curry Bowl
- 1 tablespoon oil
- half onion, chopped
- 1 cup chopped broccoli florets
- 1 cup shredded carrots
- 1 cup chopped asparagus
- 1 cup shredded purple cabbage
- seasme seed for topping
- basil to serve
- Trader Joe’s Thai Green Curry Simmer Sauce
In a large skillet, heat oil over medium high heat. Add onions carrots, broccoli and asparagus. Stir fry for 5 minutes until broccoli and asparagus are bright green. Add 4 ounces of rice or noodles to pan and combined with vegetables. Add 1 jar of Trader Joe’s Thai Green Curry Simmer Sauce. Serve topped with purple cabbage and sesame seeds. I like to add a squeeze of lime or fresh basil on top.
